morgunkorn pastryHomemade desserts for a family event: pistachio Paris-Brest. These are choux pastry ring donuts filled with pistachio whipped buttercream, candied pistachios and pistachio praline paste. The name Paris-Brest comes from the cycling race between those two French cities. A Parisian pastry chef was tasked with creating a pastry for that event in 1910 and came up with the original recipe which has hazelnuts and almonds in place of the pistachios, shaping the dessert like a bicycle wheel.
